Garbanzo & Black Bean Chili

Ingredients:

  • 3 tbsp coconut oil

  • 1 sweet onion, chopped

  • ½ yellow pepper

  • ½ red pepper

  • 6 Brussels sprouts, cut in quarters

  • 1/2 zucchini, chopped

  • 5 cloves of garlic, pressed

  • 4 fresh tomatoes, diced

  • ½  cup water

  • 1 can sweet corn kernels

  • 1 can mushrooms, drained or 1 cup fresh, chopped

  • 1 ½ tbsp maple syrup

  • 1 tbsp coriander

  • 2 tsp sea salt

  • 2 ½ tsp ground cumin

  • 1 tsp chili powder

  • 1 small can organic garbanzo beans

  • 1 small can organic baked beans in tomato sauce

  • 3 tbsp nutritional yeast

 

Directions:

  • In a large pot heat coconut oil on high; add onion and cook for 2 minutes.

  • Add garlic and cook another 30 seconds.

  • Add remaining ingredients.

  • Cook 3-5 minutes stirring as needed.
