Raw Pad Thai
Instructions:

1 package kelp noodles
-
1 zucchini, spiraled
-
3 green onions, thinly sliced
-
1 red bell pepper, thinly sliced

10 sugar snap peas, chopped
-
2 large handfuls sunflower sprouts
-
½ lime, juiced
-
½ tsp sea salt
-
1 tbsp olive oil
Directions:
-
Place all ingredients into a large bowl.

Add sauce.

Add toppings
Toppings:
-
1 cup almonds, chopped
-
¼ cup cilantro, chopped
-
handful sunflower sprouts
Ingredients:

½ cup almond butter
-
½ cup sundried tomatoes, soaked 2 hours in 1 ½ cups water
-
1 lime, peeled and chopped
-
4 cloves garlic, peeled
-
7 dates, pitted
-
¼ cup olive oil
-
½ tsp red chili flakes
-
1 ½ tbsp ginger, shredded
-
1 tbsp Bragg’s Liquid Aminos
-
1 tsp sea salt
Directions:

Place all ingredients in blender, including the water from the sundried tomatoes, and mix until smooth.
