30 days of giving - Day #25: Thai Coconut Soup
My favorite way to eat is mostly raw; however, living in a cold climate I often crave a soup to warm me up and make me feel all cozy inside.
This recipe makes enough for a double batch. If you are making for only one or two people but the recipe in half. This is one of my favorite soups and it can be found in The Magic of Living Nutrition.
Thai Coconut Vegetable Soup (double batch)
2 small can lite coconut milk
6 cups vegetable broth
4 tbsp green curry paste
6 tbsp Bragg’s Liquid Aminos
4 cups broccoli, chopped
4 zucchini, chopped
6 celery sticks, chopped
2 large carrot, chopped
30 drops of liquid stevia
1/2 tsp sea salt
2 tbsp lime juice
1/2 cup cilantro, chopped
2 tbsp hemp seeds
Add coconut milk, vegetable broth, green curry paste and Bragg's Liquid Aminos to a large pot and bring to a boil. Reduce heat and add broccoli, zucchini, carrot, celery, stevia, sea salt and limejuice. Simmer on low for about 5 minutes. Place in bowls; top with cilantro and hemp seeds.
