Lavender Tofu Scramble

1 tbsp coconut oil

½ cup sweet onion, diced

1 garlic clove, minced

½ cup bell pepper, diced

½ cup zucchini, diced

3 crimini mushrooms, chopped

¼ cup sundried tomatoes

175g organic tofu, crumbled

1 tbsp lavender seasoning

1 tsp capers

1 tbsp Bragg's Liquid Soy Seasoning

1 handful spinach

Place coconut oil in a medium frying pan over medium heat. As you prepare the ingredients, in the order they are listed, add them to the pan, stirring occasionally. Once warm remove from heat and enjoy!
