30 days of giving - Day #20: Magnificent Mixed Berry Cheesecake

The last recipe I posted was about delicious plant-based cheese and how I had to find creative ways to make my favorite food group dairy-free. Here is another delicious creation that can be found in my book, The Magic of Living Nutrition. This dessert is sure to please any cheesecake lover.

Magnificent Mixed Berry Cheesecake

Crust:

2 cups macadamia nuts

½ cup pitted dates

½ tsp cinnamon

½ cup coconut (optional)

  • process ingredients in a food processor until it has formed a thick mixture that binds together easily.

  • Remove and pat down into pie dish or square pan. Place in freezer to set.

Cheese:

2 cups cashews (Soaked, 1 hour)

3 peeled lemons

1 cup blueberries

1 cup agave nectar

1 tsp vanilla

½ cup coconut oil

½ tsp salt

  • place all ingredients in blender and mix until smooth.

  • Spoon mixture on top of crust. Place in freezer to set.

Topping:

½ cup fresh raspberries

½ cup fresh blueberries

½ cup fresh strawberries

½ cup medjool dates

  • place all ingredients in blender and mix until smooth. Add water if needed until desired consistency achieved.

  • Refrigerate until ready to serve. Pour over top of cheesecake. Serve.
