30 days of giving - Day #30: Raw Pad Thai
Asian cuisine is some of my favorite food to eat. However, most dishes contain cooked white rice noodles, cooked vegetable and sugar-laden sauces. Since I prefer to eat mostly raw I developed this tasty dish to eat when I am craving something with mouth watering flavour. This dish is sure to please anyone who loves thai food. Adjust the spices to your taste preference.
Raw Pad Thai
1 package Kelp Noodles
1-2 zucchini, spiraled
3 green onions, thinly sliced
1 red bell pepper, thinly sliced
10 sugar snap peas, chopped
2 large handfuls bean sprouts
½ lime, juiced
½ tsp sea salt
1 tbsp olive oil
Top with:
1 cup almonds, chopped
¼ cup cilantro, chopped
handful sunflower sprouts sprouts
Sauce:
½ cup almond butter
½ cup sundried tomatoes, soaked 2 hours
1 lime, chopped
4 cloves garlic, peeled
7 dates, pitted
¼ cup olive oil
1 jalepeno, chopped
1 ½ tbsp ginger, shredded
1 tbsp Bragg’s or Tamari
1 tsp seas salt
Place all ingredients in blender and mix until smooth.
Place all ingredients, except, topping, in a bowl and mix. Divide into equal servings and top with toppings. Serve.
